Take Root Tuesday

You know that one vegetable you tell yourself you'd never eat? Maybe it's kale, sweet potato, or even a fruit- like grapefruit? For me that one vegetable above all else is beets! I enjoy consuming nearly every other vegetable (as I willingly eat any fruit ) but I avoid eating beets at all costs. However, just because I don't eat them doesn't mean I have to miss out on the benefits of consuming them or any other veggies I didn't get a chance to add to my weekly meal prep. -
That's why I love JUICING! For those of you who haven't tried juicing, but have possibly heard of the controversial trend, juicing is simply the extraction of juice from fresh fruits and vegetables to create a delicious flood of micronutrients for your body. Juicing easily provides vitamins, minerals, and plant chemicals (phytonutrients) to your diet. -
Aside from protecting you against diseases like cancer, cardiovascular disease, and inflammatory diseases, juicing boosts energy levels, promotes clear thinking (see ya brain fog), increases appetite control, strengthens the immune system, is gentle on the digestive system, promotes healthy growth and increased strength of hair and nails, and gives us that beautiful glowing skin! -
Juicing is also a simple way to use up any produce you have before it goes bad. -

Beet-Kale Juice😋

4-6 kale leaves

Plus I feel great exposing the little heart-beet inside of me to a variety of veggies I don't always consume so he'll be more likely to eat them as well.
